Instructions

6 steps
  1. 1

Mix masa harina, warm water, and salt until a soft dough forms; knead for 2 minutes, then cover and rest for 15 minutes.

  2. 2

Divide the dough into 4 portions and flatten each into a thick oval about 7 inches long.

  3. 3

Spread 1/4 cup refried beans down the center of each oval, fold the masa around the beans, seal, and gently press back into a sandal-shaped huarache.

  4. 4

Cook the huaraches on a hot comal for 4 to 5 minutes per side until dry spots appear and the masa is cooked through.

  5. 5

Heat the lard in a skillet and lightly fry each huarache for 1 to 2 minutes per side until crisp at the edges.

  6. 6

Top each huarache with salsa roja, chopped carne asada, nopales, queso fresco, crema, onion, and cilantro; serve hot.
