Heat Skillet: Heat a large cast-iron skillet or griddle over medium heat. Add a tiny amount of butter or oil and spread it evenly to coat the bottom.

Layer Ingredients: Place a tortilla flat in the skillet. Immediately sprinkle 1/2 cup of shredded cheese evenly over one half of the tortilla.

Add Protein: If using meat, spread 1/4 cup of the shredded chicken or beef evenly over the cheese layer.

Fold and Press: Using a spatula, fold the empty half of the tortilla over the filling to create a half-moon shape. Press down gently but firmly.

Grill: Cook for 2-3 minutes on the first side until the tortilla is golden brown and crispy. Carefully flip and cook for another 2 minutes until the cheese is completely melted and gooey.

Serve: Remove from the skillet, let it rest for 1 minute, then cut into wedges. Serve hot alongside guacamole, salsa, and crema.
