    Grate the yellow onion using the large holes of a box grater. Squeeze the grated onion in a paper towel to remove excess moisture so the meat mixture binds well.

    In a large bowl, combine the ground lamb, drained grated onion, chopped parsley, minced garlic, cumin, coriander, allspice, and salt.

    Using your hands, gently knead the mixture for 1-2 minutes until it becomes slightly tacky and cohesive, being careful not to overwork the meat.

    Divide the mixture into 8 equal portions. Roll each portion into a ball, then press and mold it into a 4-inch oblong shape around a flat metal skewer.

    Preheat your grill to medium-high heat (around 400°F) and oil the grates.

    Grill the kofta skewers for 3-4 minutes per side, turning once, until they develop dark grill marks and the internal temperature reaches 160°F. Serve immediately.
