Sahlab

A warm, thick, milky winter drink topped with cinnamon and nuts.

Instructions

    In a medium saucepan, before turning on the heat, vigorously whisk together the cold whole milk, Sahlab powder (or cornstarch), and sugar until the powder is completely dissolved and there are no lumps.

    Place the saucepan over medium heat. Whisk continuously and slowly to prevent the bottom from scorching.

    As the milk heats up, the mixture will begin to thicken. Continue whisking for about 5-8 minutes until it reaches a rich, velvety, pudding-like consistency that coats the back of a spoon.

    Remove the saucepan from the heat and immediately stir in the orange blossom water for a fragrant aroma.

    Pour the thick, hot liquid into four heat-proof mugs or small bowls.

    Garnish the top of each serving with a dusting of ground cinnamon, a sprinkle of shredded coconut, and crushed pistachios. Serve immediately with a spoon.
