Shorbat Adas (Lentil Soup)

Instructions

    Heat the olive oil in a large pot over medium heat. Add the chopped onion and carrots, and sauté for 5-7 minutes until softened.

    Stir in the minced garlic, cumin, and turmeric, cooking for 1 minute until fragrant.

    Add the thoroughly rinsed red lentils to the pot and stir to coat them in the spices.

    Pour in the vegetable broth and season with 1 tsp of salt. Bring to a boil, then reduce the heat, cover, and simmer for 20-25 minutes until the lentils and carrots are very tender.

    Use an immersion blender to puree the soup until it is completely smooth and creamy (or carefully transfer to a standing blender in batches).

    Serve hot, garnished with a sprinkle of paprika, fresh parsley, and a generous squeeze of fresh lemon juice in each bowl.
