    Boil Beans: Drain the soaked beans. Place in a pot, cover with fresh water, and boil for 45-60 minutes until tender. Drain and set aside.

    Make the Base: In a large pot or Dutch oven, heat olive oil over medium. Sauté the onion and garlic until translucent. Add the grated tomatoes, tomato paste, cumin, and paprika.

    Simmer Sauce: Cook the tomato mixture for 5-10 minutes until it thickens and deepens in color.

    Combine: Add the cooked white beans to the tomato sauce. Pour in enough water or vegetable broth to just cover the beans.
