Moroccan Mint Tea

Bring the water to a rolling boil, then pour about 1/4 cup over the green tea in a teapot, swirl for 30 seconds, and discard that first rinse to remove bitterness.

Add the remaining boiling water to the pot along with the sugar and set over low heat until it just simmers, about 3 minutes.

Stuff the fresh mint into the pot, pressing it under the liquid, and steep gently for 4 to 5 minutes until aromatic.
