Chicken Noodle Soup

A comforting soup made with chicken broth, chicken pieces, noodles, and vegetables.

Instructions

    In a large soup pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, carrots, and celery.

    Sauté the vegetables for 5-7 minutes until the onions become translucent and the carrots begin to soften.

    Pour in the chicken broth and bring the soup to a rolling boil over high heat.

    Once boiling, stir in the wide egg noodles. Reduce the heat to a steady simmer and cook for 7-8 minutes, or until the noodles are tender but not mushy.

    Stir in the shredded cooked chicken and heat through for 2 minutes.

    Remove the pot from the heat, stir in the freshly chopped parsley, and season with salt and freshly cracked black pepper to taste. Serve steaming hot in deep bowls.
