Prepare the vegetables by very finely shredding the cabbage (using a knife or food processor) and grating the carrots. Place them in a large mixing bowl.

In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, celery seed, salt, and black pepper until completely smooth and the sugar is dissolved.

Pour the creamy dressing over the shredded cabbage and carrots.

Use tongs or a large spoon to toss the slaw vigorously until every shred of cabbage is evenly coated with the dressing.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving. This resting time allows the cabbage to soften slightly and absorb the tangy flavors.
