Gyro

Instructions

    Heat a large dry skillet or griddle over medium-high heat. Add the slices of gyro meat in a single layer.

    Sear the meat for 1-2 minutes per side until the edges turn crispy and deeply browned, releasing their savory fats. Remove from the pan.

    In the same skillet (using the residual fat from the meat), warm the pita bread for about 30 seconds per side until it becomes soft, pliable, and slightly toasted.

    Lay the warm pita flat on a sheet of parchment paper or foil. Spoon and spread the tzatziki sauce generously down the center line of the pita.

    Arrange the crispy gyro meat over the sauce. Top evenly with the tomato slices and the slivers of red onion.

    Fold the sides of the pita up to form a cone shape, wrapping the bottom half tightly with the parchment paper to hold everything together. Serve immediately.
