Preheat the oven to 450°F (230°C) and lightly coat a shallow baking pan with nonstick cooking spray.

Cut the fish into serving-size pieces. In a shallow dish, mix the flour, salt, and lemon pepper.

In a second shallow dish, beat the egg whites until frothy. In a third dish, combine the bread crumbs, cornmeal, lemon zest, and basil.

Dip the top of each fillet into the flour mixture and shake off any excess, then dip the floured side into the egg whites, and finally press into the crumb mixture to coat.
