    Cream the butter: In a large bowl, beat the softened butter and sugar until light, fluffy, and pale in color.

    Add wet ingredients: Beat in the egg yolks one at a time, followed by the vanilla extract.

    Make the dough: Sift together the cornstarch, flour, and a pinch of salt. Gently fold this into the butter mixture until a soft dough forms. Do not overmix. Wrap and chill for 30 minutes.

    Roll and cut: Roll the dough out to 1/4-inch thickness on a surface lightly dusted with cornstarch. Cut into 2-inch circles.

    Bake: Place on a parchment-lined baking sheet and bake at 350°F (175°C) for 10-12 minutes. The cookies should remain pale and not brown. Let cool completely.

    Assemble: Spread a generous tablespoon of thick dulce de leche onto the flat side of one cookie. Top with another cookie to make a sandwich. Roll the sticky edges in shredded coconut.
