Dulce de Leche

    Combine milk and sugar: In a wide, heavy-bottomed saucepan, whisk together the whole milk and sugar. Bring to a gentle simmer over medium heat, stirring to dissolve the sugar.

    Add baking soda: Once simmering, carefully whisk in the baking soda. The mixture will froth and bubble up rapidly, which is normal.

    Simmer patiently: Reduce the heat to low. Allow the mixture to simmer gently for 1.5 to 2 hours. Stir occasionally at first, then more frequently as the mixture reduces and thickens to prevent burning.

    Monitor color: The milk will slowly turn from white to a deep, rich caramel brown due to the Maillard reaction.

    Test consistency: It is done when the mixture thickly coats the back of a spoon and leaves a clear path when you draw a line through it.

    Finish: Remove from heat and stir in the vanilla extract. Pour into a glass jar and let cool completely (it will thicken further as it cools).
