Remove the Membrane: Peel the thin silverskin off the back of each rack so the ribs turn out tender.

Dry Rub: Mix the brown sugar, paprika, garlic powder, onion powder, salt, and pepper, then rub it all over the ribs.

Slow Bake: Wrap the racks in foil and bake at 150°C (300°F) for 2.5 hours until very tender.

Sauce: Unwrap, brush generously with barbecue sauce.

Caramelise: Increase the heat to 220°C (425°F) or finish on a grill for 10-15 minutes, glazing with more sauce, until sticky and charred at the edges.
