Creamy Pumpkin Soup

A quick, lightly spiced pumpkin soup with warm cinnamon and ginger, made in minutes in the microwave.

    In a 1-quart microwave-safe casserole, combine the water, canned pumpkin, sliced green onions, chicken bouillon granules, cinnamon, and ginger. Mix well and cover.

    Microwave on High for 3 1/2 to 5 1/2 minutes, until the mixture is bubbly and the onions are just tender-crisp, stirring once halfway through.

    Stir in the skim milk, then microwave on High for another 30 seconds to 1 minute, until hot.

    Stir well before serving. Makes 4 servings of about 1/2 cup each.
