Preheat the oven to 325°F (165°C). In a large bowl, combine the breadcrumbs, parsley, salt, oregano, thyme, and black pepper and stir well.

Add the acorn squash, butternut squash, parsnips, and olive oil to the bowl, tossing until the vegetables are evenly coated with the seasoned crumbs.

Coat a 2-quart casserole dish with cooking spray and spoon in the squash mixture, spreading it evenly.

Cover and bake for 1 1/2 hours, until the squash and parsnips are tender when pierced with a fork.

Uncover, sprinkle the shredded cheddar over the top, and bake an additional 15 minutes until the cheese is melted and bubbly. Garnish with an oregano sprig if desired and serve warm.
