Potato Appetizers

Crispy baked mashed-potato bites rolled in paprika and wheat germ, served warm with toothpicks.

Instructions

    Peel and chop the potatoes, then place them in a pot and cover with water. Bring to a boil and cook until soft and easily pierced with a fork, about 15 minutes.

    Drain the potatoes and mash them with the olive oil until smooth, then stir in the chives and green onion.

    Meanwhile, preheat the oven to 375°F (190°C).

    Shape the seasoned potato mixture into 1-inch balls.

    In a shallow dish, mix together the paprika and wheat germ. Roll each potato ball in the mixture until evenly coated.

    Place the coated balls on an oiled baking sheet and bake at 375°F (190°C) for about 20 minutes, until golden and crisp.

    Let stand briefly on folded paper towels, then serve warm with toothpicks.
