Instructions

    Slice the Meat: Cut the beef against the grain into very thin, wide strips. This ensures the meat cooks quickly and remains tender.

    Marinate: Thread the beef slices onto soaked wooden skewers. Brush the meat generously with groundnut oil, then heavily coat all sides with the Suya spice mixture. Press the spice in so it adheres well.

    Rest: Allow the skewered meat to rest at room temperature for 15-20 minutes, giving the spices time to penetrate the meat.

    Grill: Preheat a grill or grill pan to medium-high heat. Grill the skewers for 3-5 minutes on each side until charred on the edges and cooked through.

    Serve: Serve hot directly off the grill, garnished with sliced fresh red onions and tomatoes, and extra Suya spice for dipping.
