Bonito Flakes

Deep, smoky, and profoundly savory with a concentrated umami richness, a subtle fishiness, and a lingering savory sweetness.

Lens analyzed

Bonito flakes (katsuobushi) are tissue-thin shavings of dried, fermented, and smoked skipjack tuna that form one of the foundational ingredients of Japanese cuisine. They are used to make dashi, scattered as a garnish over hot dishes where they wave dramatically from the rising heat, and incorporated into condiments like furikake.

Where it comes from

Katsuobushi, made by simmering, smoking, and sun-drying skipjack tuna until it is rock-hard, then shaving it into flakes, is one of the two pillars of Japanese dashi stock. North American cooks buy it pre-shaved in cellophane bags from Japanese and Asian markets for soups, sauces, and toppings.

Buying it

Sold in bags of fine shavings (hanakatsuo) for garnish or thicker shavings (atsukezuri) for dashi. Look for pale pinkish-beige flakes with a clean smoky aroma.

Storing it

Keep sealed in a cool, dry place away from humidity and strong odors; use within a few weeks of opening as the delicate aroma fades quickly.

Keeps about 1 year in the pantry.
