Lens analyzedBrie is a soft, bloomy-rind cheese made from cow's milk, with a pale interior that turns runny as it ripens and warms toward room temperature. Its edible, downy white rind forms from a specific mold culture applied during aging.
Where it comes from
Brie takes its name from the Brie region of France, where it's been made since at least the medieval period and was reportedly favored at the French royal court. Only cheese made within that protected region can legally be labeled Brie de Meaux or Brie de Melun in France, though brie-style cheese is made widely elsewhere.
Buying it
Press gently at the center through the packaging — it should give slightly rather than feel hard, a sign it's ripe. Avoid wheels with an ammonia smell or a rind that looks cracked or discolored beyond its normal white bloom.
Storing it
Keep brie wrapped in its original paper in the fridge and use within about three weeks; let it sit at room temperature for 30 to 60 minutes before serving so the interior softens.
