Preheat the oven to 350°F (175°C). Grease a standard 9x5-inch loaf pan with butter or non-stick cooking spray.

In a large mixing bowl, use a fork to mash the overripe bananas until completely smooth with no large lumps remaining.

Stir the melted butter into the mashed bananas until incorporated. Then, vigorously mix in the granulated sugar, beaten egg, and vanilla extract until the mixture is uniform.

Sprinkle the baking soda and salt over the wet mixture and stir to combine.

Gently fold in the all-purpose flour using a spatula. Mix only until the flour disappears into the batter; do not overmix, or the bread will become tough.

Pour the batter into the prepared loaf pan. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
