Carrot Cake

    Grate the carrots finely using a box grater or food processor.

    In a large bowl, whisk together the vegetable oil, eggs, sugar, and vanilla extract until smooth and combined.

    In another bowl, sift the flour, baking powder, and cinnamon. Gently fold these dry ingredients into the wet mixture until just incorporated.

    Stir in the grated carrots and chopped walnuts, being careful not to overmix the batter.

    Divide the batter evenly between the prepared pans and bake for 35-40 minutes, or until a toothpick inserted comes out clean. Let cool completely before frosting with cream cheese icing.
