Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

In a large bowl, use an electric mixer to beat the peanut butter, softened butter, granulated sugar, and brown sugar together on medium speed until smooth and creamy.

Add the egg and vanilla extract, beating until fully incorporated.

In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the peanut butter mixture, blending on low speed until just combined. Chill the dough for 20 minutes if it feels too soft.

Scoop the dough into 1-inch balls and place them on the prepared baking sheets. Use a fork dipped slightly in sugar to press a criss-cross pattern into the top of each ball, flattening them slightly.

Bake for 10-12 minutes until the edges are slightly browned. The centers will still look soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
