Vanilla Cupcakes

    Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

    In a large bowl, beat the softened butter and sugar with a hand mixer on medium speed for 3 minutes until light, fluffy, and pale in color.

    Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

    In a separate bowl, whisk together the flour, baking powder, and salt.

    Alternately add the dry ingredients and the milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.

    Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack.
