    In a large bowl or stand mixer, combine 3 1/2 cups of the flour with the sugar, yeast, and salt. Add the warm milk, melted butter, and egg, then mix until a soft, slightly sticky dough forms.

    Knead by hand or with the dough hook for 6 to 8 minutes, adding the remaining flour a tablespoon at a time only as needed, until the dough is smooth, elastic, and pulls cleanly from the bowl.

    Place the dough in a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour.

    Punch down the dough and divide into 12 equal pieces. Shape each into a tight ball by cupping it against the counter and rolling in a circular motion, then arrange in a greased 9x13-inch baking dish.

    Cover and let the rolls rise again until puffy and touching, 30 to 40 minutes. Meanwhile, preheat the oven to 375°F.

    Bake 18 to 22 minutes until the tops are deep golden brown and the internal temperature reaches about 190°F.

    Immediately brush the hot rolls with the remaining 2 tablespoons melted butter and sprinkle with flaky salt if using. Serve warm for the softest texture.
