Preheat the oven to 425°F (220°C). Sift the flour, salt, sugar, and baking powder together into a mixing bowl.

Make a well in the center of the flour mixture and pour in the milk.

Add the shortening and use your hands to cut it into the flour while gradually incorporating the milk, working until the dough comes together and is thoroughly mixed. Add a splash more milk only if needed to form the dough.

Turn the dough out onto a lightly floured board and knead gently 6 to 8 times.

Pat the dough out to about 1/2-inch thickness and cut into rounds with a floured biscuit cutter, placing them on an ungreased baking sheet.

Bake for 12 to 15 minutes, until risen and golden brown on top. Serve warm.
