Pecan Pralines

Instructions

    Line two large baking sheets with parchment paper or a silicone baking mat.

    In a heavy-bottomed saucepan, combine the granulated sugar, brown sugar, heavy cream, and milk.

    Cook over medium heat, stirring constantly, until the mixture reaches the soft-ball stage on a candy thermometer (238°F - 240°F).

    Immediately remove from heat. Vigorously stir in the butter, pecans, and vanilla extract until the butter is melted.

    Continue to beat the mixture with a wooden spoon for 2-3 minutes until it slightly thickens and loses its glossy sheen.

    Quickly drop spoonfuls onto the prepared parchment paper and let them cool and harden completely (about 30 minutes) before serving.
