Bahamian Conch Fritters

    Tenderize the conch: Clean the conch meat thoroughly and beat it with a meat mallet until tender, then chop it into very small pieces.

    Prepare the batter: In a large bowl, whisk together the flour, baking powder, and salt. Gradually stir in the milk until a thick batter forms.

    Fold in ingredients: Fold the chopped conch, diced bell pepper, onion, celery, and hot sauce into the batter until evenly distributed.

    Fry the fritters: Heat 2 inches of vegetable oil in a deep pot to 365°F. Drop tablespoon-sized balls of the batter into the hot oil.

    Drain and serve: Fry for 3-4 minutes, turning occasionally, until deep golden brown and crispy. Drain on paper towels and serve with a spicy mayo dip.
