Jamaican Patties

    Make the dough: Mix flour, salt, and turmeric. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water until it forms a dough. Wrap in plastic and chill for 30 minutes.

    Prepare the filling: Brown the ground beef in a skillet over medium heat. Add finely chopped onion, minced scotch bonnet, curry powder, and thyme. Cook until onions are soft.

    Thicken the filling: Stir in the breadcrumbs and 1/2 cup of water to create a moist, thick filling. Simmer for 5 minutes, then let it cool completely.

    Assemble the patties: Preheat oven to 375°F. Roll the chilled dough out to 1/8-inch thickness and cut into 6-inch circles. Place 2-3 tbsp of filling on one half of each circle.

    Seal and bake: Fold the dough over, seal the edges with a fork, and brush the tops with an egg wash. Bake on a parchment-lined sheet for 25-30 minutes until golden and flaky.
