Preheat the oven to 375°F (190°C) and drizzle the olive oil over the bottom of a 13x9-inch baking dish.

In a small bowl, stir together the honey, salt, cinnamon, red pepper flakes, and allspice. Reserve about half of this glaze for the sauce, then arrange the chicken thighs in the dish and brush them with the remaining glaze.

Bake for 35-40 minutes, brushing once or twice with the pan juices, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Pour the pan drippings into the reserved glaze and stir in the dried cherries, water, and cornstarch.

Bring the sauce to a boil over medium-high heat and cook 1 to 2 minutes, stirring frequently, until thickened.
