Wonton Soup

    Make the Filling: In a mixing bowl, combine the ground pork, minced shrimp, half of the chopped scallions, soy sauce, sesame oil, and white pepper. Stir vigorously in one direction until the mixture becomes a sticky paste.

    Wrap the Wontons: Place 1 teaspoon of filling in the center of a wrapper. Moisten the edges with a wet finger, fold in half into a triangle, press to seal out air, then pull the two bottom corners together and seal with a dab of water.

    Prepare the Broth: In a large pot, bring the chicken broth to a gentle simmer. Season with additional soy sauce or salt to taste. Add the baby bok choy and simmer for 2 minutes until tender, then remove the greens and place in serving bowls.

    Boil the Wontons: Bring a separate large pot of water to a rolling boil. Drop the wontons in carefully. Stir gently to prevent sticking. Once they float to the top, cook for an additional 2-3 minutes until the pork is cooked through.

    Serve: Use a slotted spoon to transfer the wontons into the serving bowls. Ladle the hot chicken broth over them and garnish with the remaining chopped scallions.
