Blueberry Picnic Bars

    Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with foil, leaving an overhang on two sides, then lightly grease the foil.

    In a large bowl, stir together the oats, flour, brown sugar, baking soda, and salt. Pour in the melted butter and mix until the crumbs are evenly moistened. Set aside about 3/4 cup of the mixture for the topping, then press the remainder firmly into the bottom of the prepared pan to form the crust.

    In a small saucepan over medium heat, combine the blueberries, granulated sugar, cornstarch, and lemon juice. Simmer, stirring occasionally and crushing some of the berries against the side of the pan, until the juices thicken and are no longer cloudy, about 2-3 minutes.

    Spoon the warm blueberry filling evenly over the crust, then crumble the reserved oat mixture over the top.

    Bake for 30 minutes, until the topping is golden and the filling is bubbling at the edges. Let cool completely in the pan.

    Lift the bars out using the foil overhang, peel away the foil, and cut into 2-inch squares to serve.
