Chocolatetown Special Cake

A rich, tender chocolate layer cake made extra moist with buttermilk and a deep cocoa flavor.

    In a small bowl, combine the cocoa powder and boiling water, stir until smooth, and set aside. Preheat the oven to 350°F (175°C).

    Grease and flour two 9-inch round cake pans. (Avoid 8-inch pans, as the batter will overflow.)

    In a large bowl, cream the shortening, sugar, and vanilla until light and fluffy. Add the eggs and beat well.

    In a separate bowl, combine the flour, baking soda, and salt. Add this alternately with the buttermilk to the creamed mixture, mixing until smooth. Blend in the reserved cocoa mixture, then divide the batter between the prepared pans.

    Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Cool the layers completely, then frost with the icing of your choice.
