Lollipops

Old-fashioned hard candy lollipops you can flavor and color any way you like.

    In a heavy saucepan, combine the sugar, cream of tartar, and water. Stir over medium heat until the sugar is completely dissolved.

    Bring the mixture to a boil and continue cooking, without stirring, until it reaches 290°F (143°C) on a candy thermometer, the soft-crack stage. To test without a thermometer, drop a small amount into cold water; it is ready when it forms hard threads immediately.

    Remove from the heat and quickly stir in the flavoring and food coloring to taste.

    Carefully pour the hot candy into greased lollipop molds. When partially cooled, press a wooden stick into the center of each.

    Let the lollipops cool completely and harden before unmolding.
