Low-Fat Fudge Bars

Rich-tasting fudgy brownie bars lightened with sweet potato puree and egg whites.

    Preheat the oven to 325°F (165°C). In a bowl, combine the flour, oat bran, cocoa powder, sugar, and salt and stir to mix well.

    Add the mashed sweet potato, egg whites, and vanilla extract and stir until well blended. Fold in the chopped pecans.

    Coat an 8-inch square pan with nonstick cooking spray and spread the mixture evenly in the pan.

    Bake for about 25 minutes, until the edges are firm and the center is almost set. Cool to room temperature, then cut into squares and serve.
