Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper or a silicone baking mat.

Spoon 1/4 cup mounds of shredded cheese onto the prepared baking sheet, leaving at least 3 inches of space between each mound to allow for spreading.

If using, lightly sprinkle a pinch of taco seasoning over each cheese mound. Gently pat the mounds down into flat circles.

Bake for 5-7 minutes until the cheese has melted, spread out, and the edges are turning golden brown and crispy. Watch closely so they don't burn.

Remove from the oven and let them cool on the pan for 1-2 minutes until they are firm enough to handle but still pliable.

Carefully peel the cheese circles off the parchment and drape them over the handle of a wooden spoon suspended over two bowls (or fold gently into a taco holder) to shape them into shells as they cool and harden completely. Fill with desired keto ingredients.
