Soak wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.

In a large bowl or a zip-top plastic bag, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk to create the marinade.

Add the cubed chicken breast to the marinade, tossing to ensure every piece is well coated. Cover and refrigerate for at least 2 hours, up to 4 hours (do not over-marinate or the lemon will make the meat mushy).
