Mediterranean Baked Cod

Flaky white fish baked with tomatoes, olives, and capers.

Instructions

    Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.

    Pat the cod fillets dry with paper towels. Season both sides with salt, black pepper, and dried oregano. Place them in the prepared baking dish.

    In a medium bowl, toss together the halved cherry tomatoes, Kalamata olives, capers, minced garlic, and olive oil.

    Spoon the tomato and olive mixture evenly over and around the cod fillets in the baking dish.

    Bake uncovered for 15-20 minutes, depending on the thickness of the fillets. The fish is done when it is opaque all the way through and flakes easily with a fork (internal temperature of 145°F/63°C).

    Remove from the oven, garnish generously with fresh chopped parsley, and serve immediately with fresh lemon wedges.
