Instructions

    Char the Corn: Melt the butter in a skillet and cook the corn over high heat until charred in spots.

    Cool Slightly: Remove from the heat and let it cool for a minute.

    Dress: Stir through the mayonnaise, lime juice, and most of the cotija cheese.

    Season: Sprinkle in the chilli powder and cilantro and mix well.

    Portion: Spoon into cups or bowls.

    Serve: Top with the remaining cotija cheese and an extra dusting of chilli powder; serve warm with a spoon.
