Marinate Meat: In a bowl, toss the sliced meat with 1 tbsp of olive oil and a generous amount of fajita seasoning until well coated. Let it sit for 15 minutes at room temperature.

Sear Meat: Heat a large cast-iron skillet over high heat until smoking. Add 1 tbsp of oil. Sear the meat in a single layer without moving it for 2 minutes to get a dark crust, then stir and cook until done. Remove meat and set aside.

Sauté Veggies: In the same very hot skillet, add the remaining 1 tbsp of oil. Toss in the sliced bell peppers and onions.

Char Veggies: Cook the vegetables quickly over high heat for 4-5 minutes, tossing occasionally, until they are blistered and charred on the edges but still slightly crisp.

Combine: Return the cooked meat and its resting juices back into the skillet with the vegetables. Toss everything together for 1 minute until piping hot and sizzling.

Serve: Serve immediately from the hot skillet. Provide warm flour tortillas, sour cream, guacamole, shredded cheese, and lime wedges on the side for diners to assemble their own.
