Divide the dough into 8 balls and pat each into a thick 4-inch round, about 1/2 inch thick.

Cook the rounds on a hot comal or dry skillet for 3 minutes per side, until lightly browned and set.

Heat vegetable oil in a skillet over medium heat and fry the gorditas for 1 to 2 minutes per side until lightly crisp; drain on paper towels.

Warm the chicharron prensado with salsa verde in a pan for 5 minutes until hot and saucy.

Split each gordita open along the edge to make a pocket, fill with the chicharron mixture, and top with lettuce, Mexican crema, and queso fresco.
