Instructions

Trim any excess hard fat from the suadero, then season the meat all over with salt and black pepper.

Heat the lard in a wide heavy pan over medium-high heat. Sear the suadero for 3 to 4 minutes per side until browned.

Add the water, reduce the heat to low, cover, and cook for 1 1/2 to 2 hours, turning occasionally, until the meat is very tender and the liquid has mostly reduced.

Uncover and let the suadero fry in its rendered fat for 5 to 8 minutes, turning until the edges are lightly crisp.

Transfer the meat to a board, chop it finely, then return it briefly to the pan to coat with the hot fat.

Warm the corn tortillas on a comal or dry skillet until pliable.

Fill each tortilla with chopped suadero and serve with onion, cilantro, lime wedges, and salsa.
