Grilled Ribeye Steak

A well-marbled ribeye grilled to a perfect crust and basted in garlic-herb butter.

Instructions

    Temper: Take the steaks out 30 minutes ahead and pat dry; season generously with salt and pepper.

    Heat: Get the grill or a cast-iron pan very hot and rub the steaks with oil.

    Sear: Grill 3-4 minutes per side for medium-rare, depending on thickness.

    Baste: Add the butter, garlic, and rosemary and spoon the foaming butter over the steaks for the last minute.

    Rest: Rest the steaks 5-10 minutes so the juices redistribute.

    Serve: Slice against the grain and serve with the pan butter.
