Pancakes

Fluffy, round flatbreads cooked on a griddle, served with syrup.

Instructions

    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until evenly distributed.

    Make a well in the center of the dry ingredients and pour in the milk, egg, melted butter, and vanilla extract.

    Gently whisk the wet and dry ingredients together until just combined. The batter should be slightly lumpy; do not overmix, or the pancakes will be tough. Let the batter rest for 5 minutes.

    Preheat a lightly oiled griddle or non-stick frying pan over medium-high heat (around 350°F).

    Pour or scoop 1/4 cup of batter onto the griddle for each pancake. Cook for 2-3 minutes until the surface is dotted with bubbles and the edges appear dry and set.

    Flip carefully with a spatula and cook for another 1-2 minutes until the bottom is golden brown. Serve hot with butter and warm maple syrup.
