Instructions

    Marinate: Soak the chicken pieces in the buttermilk for at least 30 minutes.

    Season the Flour: Mix the flour with the paprika, garlic powder, salt, and optional cayenne.

    Dredge: Lift the chicken from the buttermilk and toss in the seasoned flour to coat well.

    Fry: Fry in 180°C (360°F) oil in batches for 3-4 minutes until golden and cooked through.

    Drain: Remove and drain on paper towels; season with a little extra salt.

    Serve: Pile into a bowl and serve with a dipping sauce.
