Tomato Soup

A soup made primarily from tomatoes.

Instructions

    Heat the butter and olive oil in a large pot or Dutch oven over medium heat.

    Add the chopped onion and sauté for 5-7 minutes until soft and translucent. Add the minced garlic and cook for 1 more minute until fragrant.

    Pour in the crushed tomatoes and vegetable broth. Stir in the dried basil, salt, and pepper.

    Bring the soup to a gentle simmer. Reduce the heat to low, cover, and let it simmer for 15-20 minutes to allow the flavors to develop.

    Remove the pot from the heat. Carefully use an immersion blender (or transfer in batches to a stand blender) to purée the soup until it reaches your desired smoothness.

    Stir in the heavy cream and gently warm the soup over low heat for 2 minutes (do not boil). Serve hot, ideally with a grilled cheese sandwich for dipping.
