In a large bowl, whisk together the flour, sugar, baking powder, and salt. Make a well in the center.

In a separate bowl, whisk the milk, egg yolks, melted butter, and vanilla. Pour this wet mixture into the dry ingredients and stir until just combined (some lumps are fine).

In a clean glass or metal bowl, aggressively beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter in two additions. This is the secret to a crispy exterior and fluffy interior.

Ladle the batter onto the hot waffle iron, spreading it close to the edges. Close the lid.

Cook for 4-5 minutes until the waffle iron stops steaming and the waffles are deep golden brown and crisp. Serve hot with butter and warm maple syrup.
