Instant Oatmeal Pancakes

Instructions

    In a medium mixing bowl, whisk together the dry pancake mix and the packet of instant oatmeal.

    Pour in the cold water and stir gently with a spoon just until the dry ingredients are moistened (a few lumps are completely fine).

    Let the batter sit for 2 minutes to allow the oats to soften slightly.

    Heat a large non-stick skillet or griddle over medium heat and melt the butter or heat the oil.

    Pour 1/4 cup portions of batter onto the skillet. Cook for 2-3 minutes until the edges look dry and bubbles form and pop on the surface.

    Flip carefully with a spatula and cook the other side for 1-2 minutes until golden brown. Serve hot with syrup.
