Chicken Pesto Panini

A hot, pressed sandwich combining grilled chicken, pesto, and melted cheese.

Instructions

    Preheat a panini press or a heavy cast-iron skillet over medium heat.

    Spread 1 tbsp of basil pesto onto the inside of each slice of sourdough bread.

    On the bottom slice, arrange 1 slice of provolone cheese.

    Neatly layer the grilled chicken strips over the cheese. Add a slice of roasted red pepper on top of the chicken if desired, then cap with the second slice of provolone.

    Place the top slice of bread on the sandwich (pesto side down). Evenly butter the top and bottom exteriors of the sandwich.

    Press the sandwich in the panini maker for 4-6 minutes, or cook in the skillet (weighted down with a heavy pot) for 3-4 minutes per side, until the bread is incredibly crispy and the cheese is oozing. Slice in half and serve hot.
