Provolone's pasta filata origins in southern Italy date back several centuries, with the same curd-stretching technique shared with mozzarella and scamorza. Italian immigration brought provolone to the United States, where it became a cornerstone of Italian-American deli culture from the East Coast outward.
Varieties — Provolone Dolce (mild, aged 2–3 months — the common deli variety, smooth and gentle); Provolone Piccante (sharp, aged over 4 months to over a year — firmer, more pungent, used for grating); Provolone Valpadana DOP (the Italian PDO-protected version, both dolce and piccante styles).
